2017 Lo-Fi Chardonnay

Hand harvested and sustainably grown; Whole cluster pressed to tank. Settled 48 hours prior to racking to barrel. Fermented on the native yeasts, followed by partial malolactic by naturally occurring bacteria. No sulfur used at pressing. Upon completion of primary fermentation in barrel the wine was stirred to incorporate lees, then racked to two 12HL concrete amphora for aging. Balance left in barrel for topping . The wine was racked once prior to hand bottling. Total of 40 ppm so2 added.

  • Vineyard: 80% Oak Savannah (10′ x 8′ Spacing) / 20% Spear Vineyard Estate (6′ x 3′ Spacing)
  • Soil Series:Chamise loam and Tierra Loam
  • Appellation: Santa Barbara County (Santa Ynez / Sta. Rita Hills)
  • Harvest date:August – September 2017
  • Brix at harvest: 21-22.50 brix, 3.29 pH
  • Fermentation: Barrel fermented in neutral French oak 228l barriques.
  • Aging: seven months 12hl concrete amphora (Oak Savannah) / neutral barrel (Spear Vineyard)
  • Production: 330 Cases 
  • Growing season: Typical Santa Barbara season outside of an early bloom and fruit set. The lingering drought eased in most of the state but Santa Barbara still remained dry. September typically being our warmest month, our grapes were not affected by late season heat due to the crop load and early harvest date. Total degree days just over 2100. Rainfall total 21.28” (138%- of historical average).
