Tasting Notes: quince, apple, citrus, stone fruit
Honeybear Vineyard is located in Los Olivos, Santa Barbara County, California and sits on a flat shelf overlooking the Los Olivos District. The fine, sandy loam with clay sub-soil makes the Los Olivos AVA particularly well suited for quality viticulture. The vines were planted in 2015 and field grafted in 2016. The spacing is 6’ by 2’, which is 2904 vines per acre, densely planted. The Chenin Blanc budwood came from the 40+ year old block at Firestone Vineyard, aka “Jurassic Park” on Zaca Station Road. They number 1500 vines. It is farmed using sustainable practices.
Hand harvested and sent directly to press. The juice was fermented and aged in neutral French oak barrels for 6 months.
All Lo-Fi wines are fermented via native yeasts and bacteria. Nothing is added, no nutrients, commercial yeasts, bacteria, enzymes, tannins or other popular fermentation agents. We added sixty parts per million So2 prior to bottling in keeping with our low intervention, “Lo-Fi” philosophy.
