100% Gamay Noir from Oak Savanna Vineyard on Foxen Canyon Road in Santa Ynez, California. 2025 Vintage
Two separate fermentations were carried out: one whole-cluster carbonic maceration in a large wooden tank, and the second fully destemmed in a large stainless steel tank. The destemmed lot received daily 10-minute pump-overs. The carbonic lot was managed with pump-overs and periodic draining of free run juice every two days.
The carbonic fermentation was pressed after 12 days, with the juice transferred to stainless steel to complete fermentation. Free run and press fractions were combined post-fermentation. The destemmed lot was fermented to dryness, then drained and pressed.
Both lots were aged separately in demi-muid and barrique for six months, then blended prior to bottling. Approximately 40% carbonic / 60% destemmed. The wine was polish filtered before bottling and finished with 60 ppm SO₂.
Light-bodied and vibrant, with bright fruit character. Best served with a slight chill. Classic Gamay Noir flavors of red berries and freshness.
